My New Favorite Way To Cook Mouth-Watering Chicken In Less Than An Hour
I’d been struggling to get enough protein since I started strength training about 18 months ago. The problem was that I didn’t know how to cook meat the way I liked it. I do eat eggs, milk and greek yogurt since those require very little cooking skills if any.
My favorite type of beef is brisket though, and my favorite type of chicken is smoked chicken or hot wings. All of which is very time consuming. There is a carniceria not too far from me that sells whole smoked chickens for only $7 but I wanted to learn how to cook chicken or beef at home in a way that made my mouth water.
I experimented with chicken breasts for a while since they seem to be the weight lifters best friend, aside from whey protein. The problem I had with chicken breast was that it was hard to cook. There’s a very small window of doneness with chicken breasts that it’s hard to get it right every time. In other words, it’s very easy to overcook chicken breast to the point where it tastes like a rubber tire.
Which brings me to the dark meat. I had been cooking skinless, boneless thighs lately and I must say they’re much easier to cook and are almost always tender and juicy. The only downside is that I didn’t know how best to season the chicken yet. Salt and pepper is a little boring.
I discovered this amazing BBQ Coffee Chile Garlic rub from Trader Joes that looked like it might be just the ticket. I went home and immediately got to work putting this fabulous rub on my boneless, skinless chicken thighs. The result was amazing as you can see above! I highly recommend you give it a shot!
