THE DIARY GAME : 03 AUGUST 2020: GLOOMY WEATHER, HARRELL'S BIRTHDAY AND EGUSI SOUP

Dear diary, I woke up this morning to the sound of rain drizzling softly on my rooftop. I said my prayers then I had to take a warm bath cos it was a bit cold. Stepped out briefly to the veranda and the weather was gloomy but I didn't have any planned appointment so I wasn't too hasty in getting ready for the day. After brushing my teeth, I got a call from one of my business mentors and she wanted me to anchor a small zoom meeting so I had to quickly put everything I needed in place. The meeting was a success and I was able to handle the issues that some people were having.

Gloomy weather this morning

Today is my favorite and only nephew's birthday and I'm so happy because he's growing fast. His name is Harrell, he was born 2 years ago in the city of Madrid, Spain to my eldest sister and her husband who live together in Spain.

I haven't seen Harrell since he was born because he has never been to Nigeria. I really wish I could spend sometime with Harrell especially today and hand him gifts but he is faraway from Nigeria so the best I can do is to make a video call with him. He seemed very excited today and even sang a lovely gibberish melody for me when I called his dad on a WhatsApp video call.

Later on, I decided to learn how to cook a local delicacy "Egusi Soup". I have never cooked this soup before but I always wanted to learn so I asked my sister today to teach me how to. These are most of the ingredients we used: Pepper, crayfish, fish dust, palm oil, meat, dry fish, bitter leaf, salt, crushed locustbeans, grounded egusi seeds. It wasn't as difficult as I presumed.

Firstly, I had to steam the meat and fish then using the water drained from the steamed meat and fish, I added some palm oil, pepper, salt, fish dust, crayfish first and stir. Afterwards, my sister washed the bitter leaf and chopped it, then I went ahead to add the meat, fish and crushed locust beans (which was preserved in some kind of leaf) and then stir some more. Then after a few minutes I added the chopped bitter leaf, finally and most importantly the crushed egusi seeds are added, stirred and eventually left it for a few minutes before it became ready.

The whole process took about 45 minutes and the soup actually turned out better than I expected. Right now, I'm currently considering a career as a chef. Just kidding.. LOL

I decided to go for a walk around the estate to stretch my legs and get some fresh air, I passed a few evening joggers and eventually came back home. Overall, I had a great day.. looking forward to what tomorrow brings.

Happy birthday to your favorite nephew. You seem to be a good cook. Great explanations coming in right there about how to prepare "Egusi soup". Maybe I can also try it out following your guidelines. I am a big fan of Fish, particularly the deep-fried fish.
