My family’s version of coq au vin
When my mother first met my father and decided to get married she visited her in-laws..she was impressed by the love of his family regarding this dish: rooster with thick macaroni. Yes, my grandparents were great lovers of this dish...
Truthfully, we have chicken of our own, but feel free to buy a good quality chicken from a farm or a farmer’s market.
Ingredients: 1 chicken or rooster cut in pieces, ½ cup of olive oil,1 big onion chopped, a cinnamon stick, a pinch of nutmeg, a few allspices, 1 tbsp of tomato paste, a few tomatoes chopped in pieces or a can of 400gr of chopped tomatoes, 1 cup of red wine, salt and pepper to taste. Optionally 2 gloves of garlic finelly chopped
Ingredients for the rice: the ratio is 1 cup of rice in 3.5 cups of boiled salted water
In your pressure cooker, put the olive oil and the onion and let it become light brown. Add the tomato paste, the cinnamon stick, the nutmeg, the spices, the garlic -if used- and the tomatoes. In the end, add the wine and ½ glass of water. Add the chicken pieces, salt and pepper, close the pressure cooker and let it cook in medium fire for 20’. Open the pressure cooker and if there is any water left, let it simmer for a few more minutes.
In a smaller pot, put 3.5 cups of water and some salt. Once boiled, add the rice. Let it simmer for 10’. Take it off the fire and let it rest and absorb the remaining water.
Serve with fresh pepper. Enjoy!
