Raw VEGAN Caramel Slice - A Rich And Quick Dessert Without Cooking That's Pretty Healthy Too!

Thanks to my new friendly vegan dessert guru for this awesome raw dessert made with dates, coconut, macadamia nuts and other mostly healthy ingredients. The result is a rich, yet not overpowering taste-fest that matches anything from the world of dairy desserts!

Ingredients

Base layer

half a cup of macadamia nuts
1 cup of dessicated coconut
12 dates, pits removed

Middle layer

1/3 cup of water
12 dates, pits removed
2 teaspoons of vanilla extract
1 cup of raw macadamias
1/2 cup of coconut oil, melted
1/2 cup of pure maple syrup
2 tablespoons of tahini

Top Layer

1/3 cup of coconut oil
2 tablespoons of pure maple syrup
1/3 cup of raw cacao powder

In the Kitchen


To make the base layer, blend all of the relevant ingredients until they turn into a thick paste and then add to a backing tray lined with parchment.

Spoon mixture into a lined slice tin (20x20cm) and press down with the back of a spoon. Place in the freezer.

To make the caramel layer, add the caramel layer ingredients to a high speed blender and process until completely combined and smooth.

You may need to add a little more water to help blend the ingredients. Spoon the mixture on top of the base, smooth with the back of a spoon and return it to the freezer to set.

To make the chocolate layer, melt the coconut oil in saucepan on low heat. Once melted, remove from heat and add the maple syrup (or honey), whisking briskly until well combined.

Then add the cacao powder, stirring until well mixed through. Pour the chocolate on top of the caramel filling and make sure it is evenly spread. Place back into the freezer and let it set completely (around 1 hour). Please note that the top layer does not need to be made until the middle layer has set completely.

Remove from the tin, slice straight away and store in an airtight container in the freezer.

Eat when ready!

That's some yummy looking dessert!
With using the coconut oil, do you taste the coconut at all when you eat it?

Hehe I had to look up desiccated coconut. The word desiccated kind of triggered me with thoughts of "chemical" desiccation of potatoes and other crops.

There is a tone of coconut in there, yes - though it's maybe not more than about 20% of the overall flavour.

Yes, it's probably the most expensive dessert I have ever made - so definitely not one for every day use, but nice to experiment with and especially in place of unhealthy, mass produced alternatives. Usually I would just not have any dessert at all, rather than a crappy one.

Yeah, same here, being vegan and finding good desserts is haaaard, I usually just eat strawberrys or something
