The Diary Game Season 3 || Let's Cook Grilled Eggplant
Thank God it's Friday today my dear stemmians friends. Tommorw is weekend, will I consider that as a rest day for my self? Probably not, because it's also my husband's rest day. After five days of work I need to wash his dirty clothes I also need to prioritise him. His work as a truck driver is not easy specially this month of January and February. They are on duty at night, they'll start at 7pm and finished at 7am. Hubby told me that instead of eating snack at 12 midnight he just take a nap because its really hard to fight sleepiness. I understand him because I am a sleepy head 😅 For my today's post I'll be sharing my worst experience in cooking my grilled eggplant.
Ingredients
4 pieces of medium to large eggplant
3 eggs (I used duck eggs)
Seasoning
Salt
Ground pepper
Procedure
First I lit a fire on our tungko my son brought this rocks so we can used it to cook on wood. Then I cooked our rice, my Intention was to grill the eggplant but..
..It's hard to removed the skin pala if you grilled the eggplant it's much better if fire talaga if you took a closer you'll see that it's almost cooked but it's not nabantilawan ang tawag ni hubby, parang hilaw
But I don't want that to be a waste so I'd still continue the process, I gently remove the skin but it was hard. Until Ria help me, she looks so adorable while removing the skin.
And here's it is, I beat three eggs then add salt, pepper and seasoning. I put the eggplant and gently squeeze it until it flatten. On a stove heat your pan pour cooking oil and put the eggplant then pour a little of the mixture so all be coated.
And here's the finished product, it's so perfect with calamansi and soy sauce.
