Ingredients:

  • salmon fillet ( skin) - 1 kg.
  • salt - 4 tbsp
  • sugar - 4 tbsp
  • black pepper (ground) - 4 tbsp.
  • dill (fresh) - to taste
  • dill (dried) - to taste

Preparation:

  1. Mix salt, sugar and pepper.
  2. Cut the salmon fillet in half.
  3. Roll the fish in a mixture of spices from all sides.
  4. Finely chop the greens.
  5. Sprinkle the fish with a mixture of fresh and dry fennel.
  6. Fold the slices with a stack and wrap in plastic wrap.
  7. Place the fish under the press and leave at room temperature for 10-12 hours. 8. Then remove in the refrigerator for at least 12 hours (better to withstand a few days).
  8. Before serving, remove the layer of spices and cut the fish into thin slices.
