How to Make the Perfect Boiled Eggs

Unless you are making egg salad and it doesn’t matter whether the eggs are all chopped up, it won’t matter when they don’t peel. In years gone by I have resorted to cutting the eggs in half and scooping them out much like a Kiwi. Where there is a will, there is a way, someone said. Some ones Great Grandmother taught me this little trick someplace along the journey and I have never forgotten it.
Place your clean eggs, these are less than a week old, in a pan, single layer, cover the eggs with very cold water to 2” above the eggs.
Put your lid on, place on heat and turn up to high to get temperature up quickly. When it starts to boil, turn down to a medium temperature and maintain a nice gentle rolling boil for 10 minutes.
Notice what a lovely day we are having here in central Idaho today. It is 45 outside this morning. 67 in my room. Very comfortable.
At the end of the 10 minutes set the pan off onto a trivet or a cooling rack. This lets the air circulate completely around the pan.
After 10 minutes start with the cold-water plunges. It takes several minutes for the pan to cool and the eggs to start cooling. Let them set in the cold water for about 5 minutes, changing water as necessary.
When the eggs are cool, I usually tap the pointy end first.
I think it helps release the air between the membrane and the egg itself. Then I tap the other end. I gently start squeezing and cracking the shell all around while dunking it in the cold water. This helps the membrane to separate also. I start at the point to peel, sometimes the membrane will stick, gently peel it with the egg shell.
It’s magic! Isn’t that the most beautiful yellow yolk you have seen in a while? No green on the outside edges.
There will always be one egg that is just unrelenting, and usually ends up being eaten immediately. Can’t have any ugly eggs. Lol
I have had really great results with this method, whether the eggs are a day old or a month old.

I will have to give this a try. It's always fun to try new ways of doing the same old things. I use a tablespoon of vinegar while boiling and it makes the shells peel right off but I don't always have vinegar in my cupboard.
I think we have all tried just about everything in our attempt to boil eggs I think you will like this one.
Very similar to the methods to my boiled egg madness. I do usually peel under cold water, but have never seen the technique of cracking on the pointy end first?!?! Super eggcited to go and boil some eggs right now so I can give it a try :)

I'll have to try this. I do know, as someone with fresh eggs daily, that the older the egg the easier it is to peel after a boil.
I've found that to be true too, the older the egg the easier to peel. I always buy the supply of Easter eggs for the grand kids to color two to three weeks before Easter. I use a similar system to his except after boiling I sightly crack the egg and set it in cold water, refrigerate for a couple hours then peel. Like he said though you will always have that one relenting egg among the bunch. I also do his boiling technique, I see it on food network when they were showing people how to boil a egg that won't produce that green overture on the yolk.
I worked with an older lady several years ago. She was so clever in many ways. This method worked every time.
Clever she was...she knew before all the "experts" on the food network how to boil a egg without a green rim, it amazed me to how close the comparison to using the peeling method and the link to let cold water loosen the membrane.
Seems to do the trick. The older simple ways are being lost in so many ways. I like when I see something as simple as this be revived. .

This is the way I do my eggs. Perfect yolks every time! No hard green balls in my house! LOL

I have used this method, and it definitely works to produce perfect boiled eggs! I'm a little obsessed with Martha Stewart, and this exact method is how she recommends to boil the perfect egg. A couple years ago, I was gifted a little electric food steamer for making baby food. It came with an egg attachment. It will only make 6 eggs at a time, but is so easy and makes the prettiest eggs! Being Texan, I only boil eggs when I'm making deviled eggs, so the prettier the better lol.
That's pretty awesome. Even Martha has the secret. I don't watch alot of tv so haven't seen anyone boiling eggs. That's pretty cool to have a steamer for the eggs. Something about a bright yellow yolk that makes those deviled eggs so beautiful. I love deviled eggs, but can't seem to mimic my mothers. She didn't have a recipe.
