Morning-Harvested Eggplant (Brinjals) : Perfect for Iftar, Grown with Care 🪴🍃

Eggplants had grown so much in our garden at once, Masha Allah. We had just made eggplant pakoras for iftar, so I thought I would take a picture of them in the morning. So after Sehri, when I went for a walk in the morning, I watered all the plants and took a picture of these eggplants. These eggplant plants have such beautiful, small, pink flowers on them. They don't have any fragrance, but they are very attractive.

It had spread so much in one place at once and inside it, Masha Allah, so many brinjals had started to grow. We used to take some off, and after a few days, more would grow here. We have also distributed these to many homes and because these brinjals can be made with a lot of praise.

They can also be made into a vegetable called Aloo brinjal and I made the stuffing of these brinjals at home after watching it on YouTube and everyone found it so delicious. Vegetables have the most strength and health and the vegetables that are grown at home are more delicious and the brightness of these brinjals is so high.

We frequently use these eggplants for iftar since eggplant fritters are not only tasty but also quick and easy to make. Nowadays, in our home, these eggplant tikkis have become more common than potato ones because they are loved by everyone. Their crispy exterior and soft, flavorful inside make them a favorite for families, and they are perfect for a light yet satisfying meal after a long day of fasting.

When the eggplants grew in abundance, I would prepare small packets of them and share them with the less fortunate. I would give these to my grandmother, and she would distribute them throughout the streets of her neighborhood. The eggplants we grew at home had a unique, delicious flavor that everyone loved.

However, we made sure not to include any that were overripe or overcooked, keeping only the best for sharing. It always felt rewarding to see how much joy something so simple could bring to others, and it inspired me to care even more for our homegrown vegetables.
