To Ol do make consistently great beers, they really get anything wrong. I know I've tried many a stout with various seafoods in them, but never one with champagne yeast, so this is one I'll be looking out for. We are lucky enough to get quite a bit of To Ol beers down in Australia. And Tore even visits sometimes, I've meet him and he is a very nice guy.
