Hello, my lovely friends!
I woke up at 6 am today and I have things to do, so my time is limited. I woke my daughter up, had her bath and get dressed, then took her to school. After that, I rushed to the market to buy some ready-made food for breakfast. Then I had to quickly wake my youngest daughter up, have her bath and get dressed, because she has a doctor's appointment today, two months after her heart surgery. This is a follow-up appointment to see if the surgery was successful. And, as always, I have other daily stories to share with you all.

Because we had a doctor's appointment at 9 am, we left home around 2 pm. The weather in Malaysia isn't very bright these days because of the haze from forest fires in neighboring countries, even though it's already past 8 am. Because it was so early, my daughter fell asleep in the car on the way. Her sleeping posture was so cool; I looked at her and burst out laughing. We arrived at the hospital around 9 am, after about an hour's drive. We were lucky because we took the expressway; there wasn't much traffic. My husband dropped me off at the hospital entrance while I went to the registration area for convenience. He went to find a parking spot while I took the kids to register and waited in front of the examination rooms on the 3rd floor. It was very crowded; the 3rd floor is the pediatric cardiology department.

While waiting to be called by the doctor, my daughter suddenly felt hungry. Luckily, I had bought some snacks from the market that morning. I gave her some to eat. After two or three bites, she held out her hand with a small white object in it and showed me her palm. Oh my goodness! It was my daughter's tiny tooth that had fallen out a few days ago. Today, she accidentally bit into the snack and it came out. There was a little blood, but we wiped it away with a tissue, and it stopped bleeding quickly. Then she was able to finish the rest of her snack.

When it was time for my first health checkup, I went in to see the doctor, who asked about my symptoms, performed an ultrasound of my heart, and checked my diaphragm. Then I went into the second room for an electrocardiogram (ECG). After that, I waited for almost another hour and a half. This time, I saw the doctor again and they scheduled another appointment for four months later. Then it was time to go home. I drove to a restaurant and ate quickly because I needed to pick up my eldest daughter at 3:15. However, luckily, my eldest daughter had already been dropped off at home by her friend's mother, so I drove back home myself...

IMG_20260917_173157.jpgStir-fried Water Spinach with Oyster Sauce

I hadn't even had time to rest before it was time for dinner! Today I have vegetables that I washed and put in a bag on Monday, so it's easy to cook. It's a simple stir-fried water spinach with oyster sauce. Just take the water spinach out of the bag, rinse it again (but not too much water), add minced garlic, oyster sauce, sugar, and soy sauce. Heat a pan with oil until hot, then add the prepared vegetables and stir-fry until wilted.. Then serve! Easy, right? But delicious...

IMG_20260917_175357.jpgStir-fried Tofu with Mixed Vegetables - A Delicious Favorite Menu

This is recipe #2. The ingredients might seem numerous, but it's an easy and delicious dish suitable for everyone in the family. The ingredients include 2 eggs, 1 pack of soft tofu, minced pork, carrots, green onions, and onions. The preparation is simple: cut the tofu into bite-sized pieces and put them in a bowl. Beat the eggs and add them to the bowl. Heat oil in a pan to fry the tofu and eggs together. Set aside. For the second step, sauté minced garlic in a pan until fragrant. Add the minced pork, then add the chopped onions and carrots. Stir-fry and season with oyster sauce, soy sauce, sugar, and pepper. Once everything is well combined, add enough water to cover the ingredients. Prepare a cornstarch mixture (like cornstarch slurry) beforehand. Once everything is cooked, taste and adjust the seasoning as needed. Add more cornstarch to thicken the sauce, then pour the mixture over the fried tofu and vegetables. Garnish with chopped green onions (or add them to the pan while stir-frying). And there you have another delicious dish!

*Menu #3 Stir-fried Holy Basil A spicy dish, but it'll empty the whole pot! I was thinking that two dishes wouldn't be enough for five people. So, an easy dish that we can never get tired of is a spicy Thai-style meal. With that in mind, I went to pick holy basil leaves from the front yard. While I was picking a few leaves, my eyes caught sight of something green with big eyes. Oh no! It's a little green grasshopper! It blends in so well with the holy basil leaves. Look at the basil marks it's left. I chuckled to myself; even grasshoppers are health-conscious, eating green leaves! After picking the leaves, it was time to stir-fry. It's easy! I pounded the chilies and garlic together, then heated a pan with oil. Once it was hot, I added the minced meat and stir-fried it until about 80% cooked. Then I added the pounded chilies and garlic and stir-fried until fragrant. Next, I seasoned with fish sauce, sugar, and oyster sauce, mixed everything together, and tasted to adjust the seasoning as needed. Finally, I added the holy basil leaves. The aroma of the holy basil immediately filled the air – that's the charm of delicious stir-fried holy basil! If you eat it with a fried egg that's about 20% cooked, the moment you scoop up the runny yolk, it's incredibly delicious and satisfying. It pairs perfectly with stir-fried basil chicken. I highly recommend everyone try it; you'll love it, I guarantee it!
