This is how you season the salmon with delicious rubs
With a rub you can give your grilled salmon a taste of its own. Depending on which spices you use, your fish can taste very spicy, sweet, hot or exotic. There are no limits to your imagination. Everything that comes into your mind can be pure. Mix all the spices together and then massage generously into the fillet with your hands. For salmon with skin you only need to rub the side without skin. If you add some brown sugar, it will caramelize while grilling and give the whole stuff an extra crunch factor.
Dill-Rub
- 1 lime
- 1 tsp dill seed
- 1 tsp white pepper
- 1 tsp dried parsley
- ½ tsp chili
- 1 orange
- 1 tsp green pepper
Finely grate the peel of the lime and the orange. Crush the dill seed, green and white pepper in a mortar. Mix all ingredients together.
Asia-Rub
- 1 tsp coriander seeds
- ½ tsp cumin
- 1 tsp sesame seeds
- 1 tsp fennel seeds
- 1 tsp pink berries
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp brown sugar
Roast all ingredients for 1-2 minutes and crush in a mortar.
