Cozy Winter Recipes - Kaiserschmarrn, from Austria with Love (Vegan Edition!)

Today i want to share with you a recipe from my home country: Austria! It's called "Kaiserschmarrn", a very traditional and popular Austrian dish which is very sweet and fluffy, yet smooth in its consistency. It's also perfect for the approaching cold, as it makes you feel all warm and fuzzy inside lol!
It is basically a shredded pancake, which has its name from the Austrian emperor (Kaiser) Franz Joseph I, who adored it just like most Austrians nowadays! Even in the former parts of the Habsburg Monarchy it is still enjoyed and cherished to this day.

The original version is of course not Vegan, however it's totally doable and very tasty as well in this plant based version! I tried it many times to be sure about this. ;D
It was one of my favorite dishes, and one of the very few i knew how to make myself since i was a kid! My mom taught me how to do it of course, and oh my god...she made it so good, whenever i tried to copy her 1:1 it still didn't taste as good as hers lol!
Here's how you make it!
250 ml Soy Milk, or any Vegan Milk of your choosing!
4 tbsp Flour
1 tbsp Soy Flour
1 tsp Baking Powder
1 tbsp Brown Sugar
1 small package of Raisins (depending on your preference you can also leave them out!)
1 tbsp Olive Oil (i prefer to use Coconut Oil instead)
Steps:
Mix Soy Milk + Soy Flour, gradually add Brown Sugar -> Baking Powder -> Flour -> Raisins
Heat coated Pan on high -> add Oil, let it heat up -> add Dough
Reduce Heat -> bake Dough until edge looks baked, and Surface is barely liquid -> turn the Dough around, seperate it into pieces of your choice with a Pan Friendly Fork or Spoon -> add a bit more Oil and let it bake until there's no liquid parts left (it will turn a bit brownish when it's ready!)
In our house, we always served it with powdered sugar on top and apple sauce on the side, but it is also very common to use Zwetschgenröster, a fruit compote made out of plums.
It's both ridiculously tasty, so whichever you go for, you can't go wrong lol! I even saw it being served with Fruits like Strawberries and Cherries & Almonds, which also would fit very well :')
