Ingredients needed to prepare egusi soup.

  1. 200g of egusi seed blended (melon seed,)
  2. 400g of beef
  3. 50g of cooked and boned stock fish pieces
  4. Blended dried crayfish
  5. Palm oil
  6. Ugwu
  7. Pepper
  8. Seasoning
  9. Onions
  10. Tomatoes

Preparation

  1. Cut the beef into small pieces, season with chopped onions add seasoning add half a cup of water and boil and about 10 minutes.

  2. Mix the blended egusi (melon seed) in half cup of water set aside, blend the tomatoes with onions, and pepper. Set aside.

  3. Heat the palm oil in another pot and add the blended egusi mixture to it. Stir well and allow it to fry for a moment, add the blended and stir, add crayfish and seasoning with you stockfish,

  4. Add 2 cups of water and allow to cook for five minutes, add the boiled meat or beef, and stir, town down the heat for further two minutes.

  5. Wash and slice the ugwu leaf add to the simmering soup and stir continuous to simmer for a further five minutes to allow the vegetables to soften.... And ready to serve with fufu or pounded yam.
