A great Sunday breakfast/brunch

To make the rosti (for 1 person), grate a medium potato and half of the white part of a leek. add about a tablespoon of grated cheese and press in to a rosti mold, (if you don't have a mold just shape into a "burger"), then fry 5 minutes each side in a tiny bit of oil. Top with bacon, egg and chives. Yummy , scrummy!!
