Vegetarian Spaghetti Bolognese, Recipe and Photo Shoot

Do you believe that you can make a vegan version of the Bolognese Sauce that can be equally delicious? Yes, you can.
I make this recipe very often and everyone at home loves them.

Ingredients:

1 package (500 grams spaghetti)
100 grams (3 cups) soya crumbs (soaked in hot water)
1 onion
1 clove of garlic
500 ml (2 cups) tomato sauce
3 carrots (shredded)
1 tablespoon basil (dried)
1 tablespoon mint (dried)
some salt
some pepper
some oil

Cook the spaghetti the usual way, drain them and set them aside.

Heat the oil in a pan and add the sliced onion and the garlic. Fry them a little.
Add the soya crumbs (previously soaked in warm water for 10 minutes), the carrots and all the spices and fry everything well for about 15 minutes.
Add the tomato sauce, and leave everything to cook for 20 more minutes.

Place some spaghetti on a plate and some of the sauce on top and enjoy.

It goes great with a glass of red wine.

Did your grandpa used soya crumbs?

Hahaha of course not :D this recipe is not from his book. I started by making only his recipe and now I allow myself to expand my culinary experiments :)

Excellent. You can modify this by swapping in some ketchup for the tomato sauce, and it makes "sloppy joes". The basic recipe is soya chunks, onion, tomato sauce, ketchup, and maybe some bbq sauce.

I like your idea. I will try with ketchup and bbq sauce next time. Thanks :)
