🥧To Quiche or Not to Quiche?! (Vegan/Gluten Free/Low Carb) 🥧

I was craving a quiche-y like experience so I popped these little numbers out for snack time!

Okay you got me... they are not exactly quiche (hence the title) but when is anything I ever make/share with you the same as anything anyways?

We're all about uniqueness here! :)

So, these little... (I'mma call them cakes for fun) ... cakes are savory and mine are made from freshly pressed coconut flour I whipped up that very morning.

The chia keeps them together, the onion and garlic flavor them and the sauce on top gives them an extra creaminess to them!

You can serve them with a sauce of your choice, the white dip on the side of mine is a garlicy mayo!

Best eaten out of your hand (but don't tell mom I told you so!)

To Quiche or Not to Quiche?


What You Need:


Filling:

  • 3 cups coconut flour
  • 2 cups steamed cauliflower
  • 1 ⅓ cups steamed asparagus (chopped into bites)
  • 6 chia eggs
  • ½ cup arrow root flour
  • ½ cup water
  • 1 yellow bell pepper (sliced in strips)
  • ½ yellow onion (diced)
  • 3-4 garlic cloves
  • 1 tsp pink Himalayan sea salt

Sauce:

  • 2 garlic cloves
  • 1 cup coconut cream
  • 1 lemon (just the juice)
  • 1 tsp pink Himalayan sea salt
  • 1 tsp black pepper

What To Do:


Preheat the oven to 325'F

  1. Steam the asparagus and cauliflower (not necessary but makes sure you don't get hard chunks!)
  2. In a food processor, combine the coconut flour, garlic and sea salt
  3. In a bowl, whisk together the water and arrowroot powder, then add it in along with the chia eggs and cauliflower and make sure everything pulses until it becomes a thick batter
  4. Add in the bell pepper, asparagus and onion last and just stir them through so they stay in chunks.
  5. Put these into oiled containers and bake them in the oven for about 15mins at 325'F.
  6. While they are baking, mix together the sauce ingredients (you can use the same food processor, it's going in with the other mix*) then pour the sauce on the cakes and let everything bake for another 10-15 minutes.
  7. Serve warm (although these keep quite well in the fridge and travel perfectly to boot!)
