Nice post they look great!
I cooked a couple of racks today too - also on that same Weber smoker - so easy to use!
I used hickory, did 3 hours open, then wrapped them for 2 more. Slightly overdid the wrapped time and they came out a bit too loose - still delicious though
Next time I will try it your way and only wrap them when I pull them off
