Quick and Easy Dinner for two | Tuna cakes, kale salad, baked sweet potato.
Hi guys, I wanted to share this quick delicious dinner recipe that can be cooked in 45 minutes or less. It serves about 2 people! Enjoy!
Ingredients List:
For the baked sweet potato:
1 Very large sweet potato
Drizzle of olive oil(or oil of choice)
Seasonings of choice such as: onion powder, chili powder, salt, and pepper.
For the salad:
1 Small bunch of kale(about 4 stalks)
1 Pint of tomatoes
1/2 cup of olives
Optional:
Olive oil/red wine vinegar vinaigrette to toss and coat the salad 'or' dressing of choice.
For the tuna cakes:
2 cans of tuna
1/2 teaspoon each of the following:
Garlic powder
Onion powder
Pepper
Soy sauce(in place of salt)
Red pepper flakes
Ground ginger
1 teaspoon each of the following:
Sesame oil
Ketchup
Lemon
Optional:
Sriracha or ketchup to serve
Instructions:
First:
- Preheat overn to 415 degrees F.
- Cut sweet potato into 1 inch pieces and place on foil lined baking tray
- Drizzle with oil to coat, and sprinkle with desired seasonings and bake 30-35 minutes stirring at least once to insure even cooking.
Next: - Wash and tear kale leaves from stalk. Discard stalk. Cut kale into small bite sized pieces.
- Wash and cut tomatoes half
- Drain and cut olives in half
- Combine ingredients in large serving bowl. Toss with vinaigrette or serve with desired dressing.
Lastly: - Pre-heat a few teaspoons of oil on a non-stick pan(or cast iron) on medium high heat
- Drain cans of tuna and place in bowl
- Add seasonings and mix to combine
- Coat hands with a flour and combine with about an 8th of a cup of tuna to form balls.
- Flatten tuna balls and fry in pan until crispy on both sides and warmed through
Once everything is done, serve with desired dressings and sauces and enjoy!
