YUMMY WALDORF CHICKEN SALAD! 🥗 (PHOTOS + RECIPE)

Today's post is both delicious and easy to make. It's also inspired by a favorite local dish - a Waldorf Salad.
As in the famed Waldorf-Astoria hotel here in the the heart of New York City. Which once was the Park Avenue home of Presidents Hoover and Eisenhower, as well as celebrity musicians Cole Porter and Frank Sinatra.
It's also the home of its very own eponymous salad. The recipe made its debut in 1893 and is credited as the creation of the maître d’hôtel, Oscar Tschirky.
Since the Waldorf's inception, it has inspired countless new creations. The original recipe didn't call for chicken. However, it's a yummy addition to this light, creamy, sweet and crunchy salad.
Throwing together a Waldorf is easy-peasy and it only takes about twenty minutes to make. It's also a fancy-schmancy sounding recipe that's perfect for clearing those leftovers out of the fridge.
Have you a dry, day-old leftover chicken rotisserie? You do no longer! Now you have a delish Waldorf Chicken Salad entrée...
Yummy Waldorf Chicken Salad Recipe
Ingredients
3 cups of cooked chicken, diced
1 cup seedless grapes, halved
1 large apple, diced
1 cup of celery, diced
1/2 cup walnuts, toasted & chopped
1/4 cup raisins
1/4 dried dates, diced
1/4 cup fresh parsley, chopped
1/2 cup of mayonnaise
1/4 cup of honey Dijon mustard
Salt and pepper to taste
First, I like to whip up some homemade French mayonnaise. It's so yummy and easy to make, you'll never want to bother with the store bought stuff again!
Directions
Preheat oven to 350°. Bake walnuts in a single layer in a shallow pan for 6 to 8 minutes or until lightly toasted. Allow them to cool and then chop.
Next, combine all ingredients together in a large mixing bowl and mix well. Serve on a bed of butter lettuce, on rye bread, on a pita or wrap, or however you'd like!
What I adore about a Waldorf is that you can create endless variations. Rather than red seedless grapes, I opted for black. This time I used a Gala apple and chicken, maybe next time I'll give it a go with a Granny Smith and leftover baked salmon.
Some recipes call for golden raisins (not my fave), so I chose to substitute them with sweet dried dates instead. If I ever master how to make homemade marshmallows, maybe I'll throw those into the mix too!
