#1 RECIPE: Quick, Simple, Cheap and Delicious Paleo/Keto Side Dish
Pan-fried zucchini in eggy batter
Ingredients:
1 large zucchini
1 bowl of coconut flour
3 large eggs
2/3 tsp salt
2/3 tsp curry
coconut oil
Preperation:
Wash and slice the zucchini into pieces
Whisk the eggs with salt and curry
Fill a small bowl with coconut flour
Preheat a pan with pleny coconut oil
Coat the zucchini pieces in coconut flour and than in the eggs
Fry them for around 2-3 minutes on each side
[Let the fried zucchinis "breath" for 5 - 10 minutes before eating!]
Variations:
Of course you can use other vegetables, like: eggplants, cauliflower...
You can steam the sliced pieces for a minute before coating them, but it's really not required
Instead of salt you can use parmesan cheese =)
You can use any other spices you like, instead of curry
And also different oils/fats to fry them
And before somebody complains: Yes! It is salted and spiced heavy on purpose! Because zucchinis are full of water and the spices are mixed with eggs, so the intensity of the spices are lowered. But while being in ketosis, a higher sodium intake is recommended, for me it was perfectly spiced.
I ate it as a side dish wish a steak and a salad
