A Banquet Awaited Me: My Special Friday Treat & A Chickpea Bread Recipe

We all have those weeks where things just don't go to plan and the mountain of jobs that just keep piling up start to whittle you down. Ain't it stressful? Well that was my week and I couldn't wait for the weekend.

I got a lovely surprise when finally my Friday ended and I drove the hour home. There on the table was a banquet awaiting me!

My dear wife had spent all day cleaning and cooking. Now, you see this is very special as my wife can't stand and keep busy for long periods otherwise she ends up in extreme pain. Well on Friday she didn't care as she wanted to have something nice for me to come home to after a hectic and stressful week.

She made chickpea bread with condiments, seed crackers, roasted cauliflower, sweet potato chips, she prepped all sorts of fruits and nibbles, made vegan chocolate balls and even made and brewed her own tea from lemongrass in our garden.

So today I thought I'd share with you how the chickpea bread is made... You will need.
2cups milk (coconut milk was used here)
2tsp apple cider vinegar (can use more if like)
2cups chickpea flour
1cup plain flour
1/4cup sugar (I actually don't use the sugar)
2tsp baking powder
Pinch or 2 of salt
1/3cup oil (I use coconut oil)

This recipe is also exactly the same recipe for corn bread just substitute the chickpea flour for corn meal and you'll have corn bread. I also add a mixture of ground ginger and garlic cloves to the batter before putting it into the oven for more flavour.

Preheat the oven 350F
Oil a baking dish or skillet and put into oven to heat it up before adding mixture into it.

Combine milk and vinegar, set aside.
Mix all dry ingredients together then add the milk and vinegar.
Mix really well together. This is when I would add the garlic and ginger and mix well again.
Put in skillet or baking dish and cook for about 30 min..

It is best eaten when warm.. Yummo.
Once cooked you can also freeze it for another time and just heat up when you want it.

Hi @ryivhnn. Thanks for the well wishes. All my cares were washed away as you can imagine when I saw what awaited me! I ate until I was over filled. The decadence!

The photos of the feast made me drool! For anyone out there that says vegan is difficult or tasteless needs to see these photos. What a nice treat to come home too. Are you feeling any different being on the vegan diet?

Hey @cecicastor, yeah the photos look amazing don't they. All the effort and attention to detail, even down to the tea pot! We were discussing recently that avoiding meat actually makes you focus more on taste and texture. When you just throw on a steak, usually the accompanying vegetables are somewhat of an afterthought.

It's hard to say with certainty but I do believe my body is running better since abandoning meat. I'm certainly impressed with how utterly effortless it's been to implement this change. No cravings, no headaches, it's like it was always this way.

I think my digestion is more smooth and perhaps I'm less lethargic. It certainly hasn't been worse avoiding meat. The preparation of food has felt more clean and desirable too. Meat requires more effort to keep and prepare.
