Processing Okra into Powder as a means to safeguard against vegetable shortage, #02.

Okra after harvesting can be further processed into a powder form and this is to enable it lasts longer and can be used at anytime. As such, in times of scarcity, it can be easily made available. It is very much very expensive during this period and can fetch much income to farmers.

However, for this to be effective, the following procedures must be considered;

  • Fresh okra is collected after harvest, washed and cleaned. This is to ensure that all contaminants are removed such as insects, caterpillars, ants etc.
  • Okra is then chopped into small pieces by the use of a sharp knife and are then spread on a platform for drying. Drying can either be mechanical or traditional.
  • The dried chips are then collected and ground into powder by the use of any grinding device, be it blender, mortar and pestle or grinding machine.

    -The powder obtained is then sieved to a fine dust that if kept in an opaque mineral container, it could stay up to four years before getting bad.

    However, the use of an opaque container is simply to ensure that there is no nutrient loss. It can always be taken later in a measurable quantity and stirred in water until it dissolves completely, then cook into whatever desirable form deemed. It is at this time a wonderful food recipe, and is worth trying.
