I like to get a feel for the flavours that people naturally like.
I have a strong background in holistic nutrition, so my work does not include refined carbs, refined sugar, or, grains. I have moved to a low lectin style of cooking and eating. Technically, I am not a vegetarian but often go many days without consuming animal protein.
This is not for everyone, but I have had to teach myself, how to live this way for health reasons. (I have MS, which is an autoimmune disease and I've been able to put it into remission by changing what I eat and by using the medicine contained within the cannabis herb.)
