Raj Kachori is the most popular and delicious street food
Raj Kachori is essentially a large, puffy, and crispy puri made from a mixture of semolina and refined flour. The real magic lies in the filling. When this crispy kachori is slightly broken in the middle, it reveals a treasure trove of flavors. It primarily consists of small pieces of boiled potatoes, soft bhalle (dahi vadas), boiled white gram, and moong dal sprouts (sprouted lentils).
It is then drizzled with a variety of delicious chutneys. First, it is poured thick, sweet, and cold whipped yogurt. Next, it is added a tangy-sweet tamarind and date chutney, and a spicy green mint-coriander chutney. All these ingredients combine to create a tangy, sweet, and spicy flavor that is sure to captivate the taster. To beautify it and enhance the taste, it is topped with finely chopped gram flour sev (salted), fresh red pomegranate seeds, chaat masala, roasted cumin powder and finely chopped coriander leaves.
