Culinary herbs rustic dish
This is a dish you don't meet in the city's cuisine. It is a specialty of the countryside and was cooked in the old days when the housewives made a dish out of the most humble ingredients they could find.
The main ingredient is a herb found in the countryside called lepoudia (λεπουδιά). So lepoudies with feta cheese.
Ingredients: 1 kgr of lepoudies washed, cleaned and cut in big pieces, 170ml evaporated milk, 200gr feta cheese, 5 spring onions finely cut, 1/3 bunch of dill finely cut, 1/2 cup of olive oil, pepper
You first blanch the herbs in a big pot for 5'. Then you drain them. Put the olive oil in the pot along with the spring onions, the herbs, the milk, the dill and the feta cheese in pieces and let your ingredients simmer for 10' in law fire. Ready!
You enjoy preferably with homemade rustic bread!
