SLC-S28/W3-“Local Taste, Global Twist| Healthy Local Cuisine”
It's the third week of Steemit Challenge, Season 28 and I am super excited to be here again exploring through local taste and global twist.
This week, I will be preparing healthy local cuisine ( Party Jollof Rice). Nigerian party jollof is among the most popular meals either for events or home consumption and yes! This dish goes hand-in-hand with moi-moi. Moi-moi is made from beans and it is very healthy.

- Rice
- Tomato paste
- Onions
- Dried pepper
- Curry/ thyme
- Smoked fish
- Maggi
- Crayfish
- Salt
- Vegetable oil

Wash and parboil rice then set it aside.
Heat the pot up with vegetable oil and add sliced onions when it is hot.
Add smoked fish and continue frying before adding tomato paste ( Gino product gives the rice nice taste and flavor which is why I will boldly recommend). Cover the pot for at least a minute.
Add curry and thyme while the gas is still on low heat.
Add salt and maggi to taste.
Add dried pepper, stir and pour in the parboiled rice.
Add crayfish and a little water ( depending on the texture of the rice).
Add a little sliced fresh pepper ( extra ingredient) and cover the pot to boil.
Nigerian party jollof should be smokey, so I allowed it to burn a little before turning off the gas.

Wash beans, blend with fresh pepper and onions. Pour it into a bowl, add ingredients to taste; maggi, salt, crayfish and vegetable oil
Mixing ingredients with blended beans
Mix properly and put the mixture into nylon.
Arrange them into a pot, add water and cover to cook.
Both party jollof and moi-moi were ready and served!
All the ingredients used were accessible and I used moist heat cooking method in preparing this delicious delicacy. I used more of dried pepper instead fresh, smoked fish instead of beef or chicken and I also added crayfish to have a unique taste and flavor.
Making use of dried pepper, smoked fish and crayfish gives the meal more of local taste. This new version was giving local Nigerian taste and makes it more flavorful. Combining the rice with moi-moi makes it satisfying.
I think people should try this new version because it's healthy and most of the ingredients used has a natural richness and the taste is unique. Moi-moi is also very healthy ( an excellent source of protein).

I feel excited to see you transform your local dish into something beautiful.
Since our goal this week is to cook healthy even while we maintain the taste, I feel it should have been better to cook this party jollof in another style by cooking all ingredients instead of frying and maybe you bake moi moi instead of steaming it. You have also not answered my questions explicitly!

Oh, dear, you've prepared one of my favorites! I can eat jollof rice for breakfast, lunch, and dinner. Hahaha, your final presentation looks delicious 🤤, but I wish you had added more veggies to it. Success!
