Kebab Recipe. Traditional seekh kebab making process.
Wazwan, the typical Kashmiri feast, has a number of components, and seekh kebab is one of its primary and inalienable ingredients. There would hardly be anyone in Kashmir who dislikes it or would not want it in their Wazwan. It is one of the simplest recipes, quite easy to make, and also one of the tastiest dishes to ever experience.
It is mainly made from minced mutton, to which some aromatic spices are added, making it one of the top-rated components of Wazwan. Anyway, today I will share the recipe of this easy and delicious food, which can be made even by someone with little cooking experience.
The primary ingredients needed to make kebab are:
• Mutton with some fat
• Onions
• Chilies
• Cardamom
• Salt
• Fresh coriander
• Cumin seeds
• Turmeric
• Eggs
The steps of preparation are:
Step 1:
We need to mince the meat properly into very fine pieces. Traditionally, this is done on a wooden log, but it can also be done on any cutting board. The meat should be minced until it reaches a paste-like consistency. The finer it is minced, the better the taste will be.
Step 2:
While mincing, add onions to the meat and mince them together with the mutton.
Step 3:
Add spices like red chilies, cardamom, cumin seeds, salt, turmeric, etc.
Step 4:
Mix the spices well with the minced meat, then keep it covered for about half an hour so the flavors blend properly.
Step 5:
After resting, start shaping the meat into cylindrical forms on skewers. Grill them over open charcoal, turning the skewers evenly so that the kebabs cook uniformly on all sides. This not only cooks them properly but also adds a smoky flavor and gives them a beautiful appearance.
Serve them hot. Here in Kashmir, we usually eat these kebabs with rice, though they can also be enjoyed with bread and some sauce. However, rice remains the most preferred option.
