List the varieties of steamed noodles available in your region. Which one is your favorite and why?

Traditional steamed noodles in my region include instant noodles, Chinese style chow mein, spicy ramen, etc. Apart from these, homemade steamed noodles are also quite popular, which are easily made with eggs and semolina. My favorite is the chicken flavored ramen because its unique balance of creamy and spicy flavors is unique among steamed noodles. It is spicy and quite cheesy at the same time, so it is very delicious to eat, you can enjoy the taste of chicken and cheese in every bite while eating.

Make the "Idiyappam(Rice Noodles)" or any steamed noodles that are shared in the course, or make them as per your style, with a detailed step-by-step procedure along with images.

Making Process

Step 1:

I took three cups of rice flour in a mixing bowl, added salt and one teaspoon of sesame oil to the flour. Then I slowly added the boiled hot water and mixed it well with the flour with a spoon. To make the perfect dough, you have to add water slowly, then the consistency of the dough will be perfect. Rice flour will become crumbly when mixed with water, then you have to add water slowly and mix it well with your hands.

Step 2:

When the yeast has cooled down a bit, I kneaded the yeast well by adding a little sesame oil to my hands. The yeast should not be too hard. I kneaded the yeast with oil in my hands until it was smooth and there were no cracks.

Step 3:

I put a pot on the stove, filled it with water, and let it boil. When the water started boiling, I placed a perforated steam plate on top of the pot. Then I spread a white cloth over the perforated steam plate.

Step 4:

I didn't have the equipment needed to make Idiappam at home, so I used a new syringe here and cleaned it thoroughly with hot water. Now I took a little flour from the yeast and filled the syringe one-third full with flour.

At this stage, I pressed the Idiyappam with my palm to make noodle-like flakes on the cloth laid on the steam plate placed on the stove. I spread the noodle flakes all over the steam plate in the same way. It took me a long time to spread the noodle flakes by applying pressure.

Step 5:

I placed this steam plate over a pot of boiling water on the stove and covered it with a lid. I waited for 15 minutes for the steam to cook. When they are cooked, the steam will give off a fragrant aroma. After 15 minutes, I opened the lid and checked with my hand whether the noodles are sticking to my hand. If they are not sticky, then the idiyappam is cooked and should be removed from the stove immediately.

After removing it from the stove, I removed it from the steam plate to another plate.
