Shortcake
INGREDIENTS
200 gr. Of flour
200 gr. Of strawberries
200 ml fresh cream
80 gr. Of powdered sugar
1 egg
1 tsp. Of baking powder
80 gr. of butter
1 tbsp. Glass sugar
Salt
HOW TO MAKE SHORTCAKE
Put the egg and sugar in a bowl and beat with a whisk until frothy.
Add the flour, after having sifted along with the baking powder and a pinch of salt, half the cream and the butter cut into pieces. Mix again, until a granulated mixture is obtained.
Knead vigorously with your hands and stretch the dough by hand until a thickness of about 2 cm is obtained from which round biscuits will be cut about 8-10 cm. diameter.
Place the dough disks in a tray covered with foil and let stand in the refrigerator for 20 minutes.
Then place in a lined pan with baking paper and bake at 220 ° C for 20 minutes.
Meanwhile wash and cut the strawberries into pieces. Beat the remaining cream and add the icing sugar, incorporating gently with a spatula. Once the cake is removed from the oven, let cool and cover with cream and strawberry pieces.
Notes: You can vary the cake with berries, peaches or apricots.
