SLS32-The Kitchen Diaries Week 2: Leftovers to Masterpiece - Watalappan

Today, I'm participating in @suboohi's weekly challenge, where we are invited to create a recipe using leftover ingredients we have at home. Since there is almost no Sri Lankan food made without coconut milk, we always have some leftover in the fridge. Today, I decided to make Watalappan (with my mom's help, of course, haha!), a delicious sweet dessert from Sri Lanka. It's also worth noting that this dish was historically influenced by Malay and Indonesian cuisine.
So, let's get started!

Ingredients & Spices

| Spices | Cardamom, Cinnamon, Cloves |
| Eggs | 4 |
| Coconut Milk | 350 ml |
| Sugar | 250g (used instead of jaggery) |
| Sugar (for Caramel) | 4 tbsp |
| Boiling Water | 3 cups |
Caramelizing the Sugar
First, I added 4 tablespoons of sugar into a stir-fry pan and caramelized it while carefully adding 3 cups of boiling water.
Mixing the Base
Then, I added the leftover coconut milk and stirred it for about a minute. Next, I added 250 grams of sugar. (We normally use jaggery, but since I didn't have any at home, I used sugar instead).
Finally, I added the cloves, cinnamon, and cardamom. After mixing everything thoroughly, I let it cool down for a bit.
Whisking and Straining
Then, I whisked the 4 eggs in a bowl for about 2 minutes and added the previously mixed base. I made sure to strain the spices out before adding the liquid into the eggs. Then I mixed it well.
Steaming and Cooling
Then, I steamed the mixture in the rice cooker for about 50 minutes and let it cool down before putting it in the refrigerator.
I decided to make this dessert because it deeply reminds me of my childhood. I always remember visiting my aunt's house and finding Watalappan waiting for us. In fact, for almost every special occasion, Watalappan is always there on the table.
To keep food from spoiling, keep it cold by putting it in the fridge or freezer right away so germs cannot grow. Next, keep it dry and sealed by using clean, airtight containers to block out air and dirt. Finally, you can dry, salt, or pickle food to remove the water that germs need to survive.
