Know Filipino Food: Pancit Bihon (A Noodle Dish)

Pancit means a variety of Philippine noodle dishes. This is just the second noodle dish that I'm going to blog about. Pancit bihon is made of the thinnest glass noodle. Cooking pancit bihon starts with sauteing the garlic and onions and adding small slices of pork, chicken or chicken liver. Soy sauce, bell peppers, ground black pepper and water is added to the mix then let it simmer. Other vegetables will be added soon after simmering, like carrots and cabbage. Then the glass noodle will be added and wait for it to simmer again. There might be a need to keep adding water because the noodles absorb a lot of water as it cooks and we don't want the pancit bihon dry but we don't want it saucy either.
