The National Office for Health Safety of Food Products issued new clarifications regarding the greenery and rot of some of the Eid sacrifices, mainly due to the conditions of preparing the sacrifice before, during and after the slaughter and the high temperature recorded during the Eid holiday of this year.

According to a communiqué issued by the office, "cases of greenery or rot of meat of sacrifice have not been recorded in recent years, except for this year and last year at a very low rate. This is due to the coinciding of the Eid al-Adha with the summer, 20-25 ° at night and 28-38 ° day, with abnormally high humidity. These climatic conditions, if coupled with non-compliance with the hygiene conditions that are required when slaughtering, preparing and storing meat, lead to the rapid reproduction of some of the typhoid species present internally and externally. "

"The national consumption of red meat annually concerns more than 3.5 million sheep and goats being slaughtered in various massacres of the Kingdom. No cases of greenness and rot have been reported. The sources of these animals are the same as those that supply the national market with Eid sacrifice," the office said.

"The news of some of the sources is baseless and not based on precise scientific grounds," the report continued. "The annual national program to monitor drug residues And steroids in sheep meat, goats and cows, which concluded the absence of samples of meat underwent laboratory tests of residues of these substances.

Monitoring of fattening cows

The report confirmed that the office "will strengthen monitoring of broodstock to ascertain the source and quality of feed and take punitive measures for all violators."

The office explained that "the supervision and maintenance operations carried out by the inspectors and technicians of the office before and during the Eid allowed 2563 awareness campaigns and 6690 field visits, including 2649 for cattle breeding, 3457 for markets and sale of sacrifice, 4228 and 32.700 (10522 kg of meat and 2052 kg of viscera) because it is not suitable for consumption; the office has reached about 1449 complaints by citizens, including 670 complaints of rot and greenery of sacrificial meat. "

The Office confirmed that "laboratory tests conducted by the Office on the samples taken from some of the sacrifices allowed the detection of spores from a large number of bacteriostatic bacteria (clostredies) in pseudomonas, coliformes, staphylococcus )). The presence of these bacteria frequently shows that the cause of the color change of meat is mainly due to the proliferation of bacteria Clostridium and pseudomonas. These bacteria pass from the digestive system to the diaphragm immediately after slaughter and the animal's immune system stops and continues to multiply whenever appropriate conditions are available (temperature rise, water catalyzing, cooling delay, etc.).

Numbering of sheep and goats

According to the same report, the Office considers that "what happened this year will improve and strengthen the monitoring system for the sheep and goat chain, starting from 2018 in the sheep and goat numbering program, which will enable it to be tracked; And to focus on providing practical advice to citizens regarding the conditions of preparation of the sacrifice and the preservation of its meat, taking into account that Eid al-Adha for the next five years will coincide with the summer period characterized by high temperatures.
