Question 1: What’s the name and story behind your signature dish?

The name of my dish is pancake. This meal is mostly served as breakfast and on this day, I needed to make breakfast then pancake crossed my mind so I decided to use the leftover flour at home to create fast and memorable dish. I sense that everyone at home are tired of the regular Nigerian pancake so I had to be extra, intentional and creative with my style. Ideas came in and I was able to transform this dish into something unique with a global touch. That touch added was the stirred fry veggies.

Question 2: How does it reflect both your local roots and global imagination?

I've always been preparing pancake with regular ingredients at home ( flour, egg, sugar, salt, pepper and onions) and my memories of pancakes from childhood keeps being the same. Plan pancake recipe is regular here but global imagination stepped in and I transformed it from basic to colorful and tasty with healthy appealing.

Question 3: What makes it stand out from every other dish you’ve made?

Ingredients used in making this meal are versatile in the kitchen which also makes the meal (pancake) versatile which means that it can be combined with tea, custard, oat, drinks e.t.c when serving. Another reasons why this meal stands out includes;

  • Its uniqueness ( different ingredients, different taste)
  • It has a global presence after preparation
  • It is simple to prepare but yet creativity is being displayed.
  • No matter the touch or twist, it still maintain its real identity.

Question 4: If you could serve it to anyone in the world, who would it be and why?

If I could serve this to someone in the world right now then it would be served with great love to my little sister (Mish).
Reason being that she will be happy and the memory of this dish will always remind her of how much I love her. Honestly, after making this pancake in such an appetizing manner, I said to myself that my younger siblings will definitely like this in their lunch box.

Preparation method of this recipe is easy, less time consuming and I would gladly recommend it for trials because the taste was on point.

I will invite @eliany, @chant and @suboohi to join the challenge.
