Coconut Flour Lemon Pound Cake
Ingredients:
5 eggs
1/3 cup coconut oil, melted
1/3 cup maple syrup
1/3 cup lemon juice
1/2 cup plus 1 Tablespoon coconut flour
1/4 cup tapioca starch
1/2 teaspoon baking soda
Instructions:
Preheat oven to 350 degrees F. and grease a loaf pan. In mixing bowl, whisk eggs, coconut oil, maple syrup, and lemon juice.
Add the coconut flour, tapioca starch, and baking soda. Mix well. Place into greased loaf pan.
Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
Remove from pan and let cool.
For the glaze:
1/3 cup coconut butter
2 Tablespoons maple syrup
2 Tablespoons lemon juice
Mix all together in a small bowl. Spread on cake or individual slices and enjoy!
