Flat Bread
We love to make flat bread using whatever herbs we have on hand. We use kamut wheat since that is the only type that my daughter can eat. Here is the recipe that we use.
Ingredients:
1 packet active dry yeast
2 cloves minced garlic
1 Tablespoon minced herbs, we like rosemary
3/4 teaspoon sea salt
1/2 teaspoon organic sugar
2 cups kamut wheat flour
1 Tablespoon olive oil
3/4 cup warm water
Directions:
In a large mixing bowl, add yeast, garlic, herbs, sea salt, sugar, kamut, and mix.
Add water and olive oil and stir to mix. Add more water as needed, until a dough forms.
Transfer to a clean surface and knead until smooth and elastic, adding flour as needed.
Oil a bowl and roll dough around to coat and lay seam-side down in bowl. Cover with a damp cloth or plastic wrap and set in warm place to rise until double in size.
Once double, cut dough into 6 even pieces and let rest.
While resting, heat a large skillet. Roll one ball out at a time into a large circle.
Lightly grease skillet and lay down the flatbread. Cook for about 2 minutes and flip. Cook on the other side. Continue until all the bread is cooked.
Eat warm and fresh,
