Sunflower Butter Cups
Since my daughter can't have peanut butter we decided to make our own version of peanut butter cups with ingredients that she can have.
Ingredients:
1/2 cup organic virgin coconut oil
1/2 cup sunflower seed butter (or any nut/seed butter of your choice)
2-3 Tablespoons unsweetened cocoa powder
2-4 Tablespoons monk fruit (or a sweetner of your choice)
Instructions:
In a pot over low heat melt coconut oil and sunflower seed butter.
Stir in cocoa powder.
Stir in sweetner.
Once all melted, remove from heat.
Pour into mini baking cups about 1/3 full.
Place in freezer for at least 15 minutes.
Once harden, make another batch of chocolate. While that is melting put about a teaspoon of sunbutter in each cup.
When the chocolate is done, carefully pour over the sunbutter. Place in freezer until set.
Store in fridge or freezer.
