Recipe of Recipe of the Day, Week No. 102:(porridge plantain with beans )"

My ingredients are;
Plantain
Beans
Pumpkin leaf i.e vegetable leaf
Maggi
Red oil
Pepper
Onions
Crayfish
Salt
First I start by peeling off my plantain

Then chop them into small pieces

I then select my beans and cook it for an hour then get back to my plantain , chop them into the pot added my ingredients except vegetable and red oil because I always love my vegetable still fresh .

After that I put my pot on fire to cook the plantain to get soften since I’ve already cook the beans, after some minute I went to check on my pot and the plantain is soften I added my beans to the pot turn it and then add my oil and allow it to cook for some minute then I added my vegetable leaf and bring my pot down .

Since my daughter prefer fried potatoes to plantain i now peel some potatoes and chop them into smaller part then deep fry it until golden brown n serve her with the beans

So plantain and potatoes are very healthy food for both adults and toddlers.
