Winter Comfort Sweet: Carrot Dessert Recipe

As it is winter in Kashmir, we follow different habits that help us keep warm and cope with the challenges that the season brings. We change many aspects of our lifestyle during this time of the year to stay fit and healthy. Along with our daily routine, our food habits also change. We usually eat certain dishes that are specific to winter and are rarely consumed in summer. One such famous sweet dish is made from carrots. Here, I would like to share its recipe and explain how it is prepared.

We need about 1 kg of carrots, or you may take the quantity as required. First, the carrots are washed, peeled, and crushed or grated. After that, they are placed in a pan and cooked until they release all their water, which gradually evaporates, and the color of the carrots turns slightly brownish. Once they reach this stage, we add some ghee and about 2 litres of milk for 1 kg of carrots. We also add sugar and cardamom powder according to taste.

Now the main cooking process begins. The mixture is cooked on low to medium heat until the milk reduces completely and the consistency becomes thick. Meanwhile, we keep dry fruits ready, such as almonds, cashews, raisins, and pistachios. We also add condensed milk or milk solids, commonly known as maava in our local language, to enhance the taste and richness.

As the milk dries up completely, it starts coating the carrots, and the mixture becomes dense. When the carrots lose all their moisture and the ghee begins to separate from the sides of the pan, the dish is almost ready. At this point, we add the dry fruits, though they can also be added earlier while cooking.

The sweet dish is now ready to be served. It can be garnished with crushed almonds or other dry fruits. This is one of the most loved winter sweets in Kashmir, and anyone who tastes it truly enjoys it.
