Welcome to my blog. It's my delight to be part of this week's challenge, with the theme of lentil soup. Beans are one of my favorites because nothing beats them when it comes to the comfort they give on a chilly or rainy evening. The natural sweetness of beans pairs well with the aroma of onions and a blend of natural spices.

Every spoonful of honey beans feels like a warmth flowing from our stomach into our whole body, which makes it relaxing, calming, and satisfying. Beans are a kind of food that not only fills our bellies but also our hearts. Without wasting time, let's get to cooking!

Ingredients For Bean Soup:

  • 3 cups of beans
  • Onions (Chopped)
  • 2 medium carrots (dice)
  • Green Beans (diced)
  • Shombo (blend)
  • Tomatoes (diced)
  • Seasoning cubes
  • Palm oil, Salt to taste
  • Natural mixed spices (flavor)
  • Curry leaves (flavor)
  • Grounded Crayfish

Preparation Step:

1. I sort the beans, removing all the possible stones, dirt, and chaff. Then I thoroughly wash the beans.

2. I cook the beans: I add the beans to a pot, pour in water, and cook them until soft. This takes an hour.

3. I prepare the base: in a frying pan, I add palm oil and allow it to heat up, then add a pinch of salt and pour in my chopped onions and saute until soft and fragrant.

4. Add Shombo and fried, add tomatoes and other veggies, and stir for 3 minutes.

5. I Add Seasonings: cubes, natural mixed spices, crayfish and salt and stir well.

6. I combined the sauce with my cooked beans and stirred it well, adding water again to get my desired soup thickness.

7. I added chopped curry leaves and allowed the bean soup to simmer gently allowing the soup to absorb the flavors. I tasted the soup and it was delish!!!

My bean soup is ready. Here in Nigeria, you can enjoy it with bread, yams, rice, and plantain, or you can eat it on its own as a hearty soup.

Challenges I Face During Preparation Of The Bean Soup:

1. Long Cooking Time: It takes me more than an hour to prepare the food because Honey Beans can take a long time to soften.

2. Gas cost: prolonged cooking time consumed gas.

3. Impurities/dirt in Beans: Stones or sand are common. So it takes time for me to carefully sort before washing.

Healthy Nutrients In Honey Bean Soup:

Honey beans are naturally sweet, and they're packed with nutrients that are recommended for everyone.

1. They contain plant-based protein which supports our body, repairs the body, and gives us energy.

2. It has high fiber which aids digestion and prevents constipation. It keeps us full.

3. It contains iron, and potassium which are important for; healthy blood, supporting the heart and blood pressure control.

4. It contains folate and B Vitamins which are essential for cell growth and brain function.

5. It has magnesium which helps in muscle relaxation and nerve health. It is low in fat and bad cholesterol which are both heart and weight friendly.

Pairing the beans with other veggies like carrots, onions, and tomatoes makes the soup even richer in vitamins like:

  • Vitamin C
  • Vitamin A
  • Anti- Anti-oxidants and
  • immune-boosting compounds.

As I said before, there's something magical about settling with a warm bowl of bean soup, it's soothing and comforting. The natural sweetness of the beans blended well with the aroma of the other veggies and spices making it even more enticing! It was a soft and thick broth that made me relaxed, yes it lifted my mood.

Bean Soup has its way of making cold weather feel peaceful, homely, and cozy! Yes, it warms my entire self!
