Cooking Low Budget Afang Soup, Rice And Beans, Chips And Egg

On this day, I was craving for Afang Soup. My boy asked for MTN rice and beans while my girl asked for plantain chips and fried egg. Who am I to say no... Lol. I had to managed the funds available so that everyone will be happy. So I was set for shopping at the market.
Luckily my good friend came around while I was already on my way to the market, so he had no choice than to join me to the market.
I carefully selected all my ingredients for Afang Soup, MTN rice and beans, plantain chips and fried egg.
→ Afang leaf
→ Water leaf
→ Fish
→ Crayfish
→ Ikpa
→ Mfi
→ Palm Oil
→ Pepper
→ Seasoning cubes
→ Salt
→ Rice
→Beans
→ Onions
→ Vegetable oil
→ plantain
→ Egg
→Ginger
Procedures
I had sliced and grinded my Afang at the market at once. I washed and cut my water leaf, onions, fish, and ikpa accordingly. I washed my pepper and pounded it with crayfish so that pepper will not enter my eyes..... Smiles. I washed my mfi and set it aside.
While I was preparing these ingredients, I was parboiling rice and fire and equally boiled beans too and set it aside.
I quickly put my pan on fire, poured in my sliced water leaf and red oil. Reason for this was that I wanted water from the water leaf to dry off completely so it doesn't give that slappy taste.
Went in with my fish and crayfish, covered to steam. Went in with my ikpa, mfi, allowed to steam went in with my seasoning cube and salt, confirmed taste. Went in with my Afang, poured in the remaining pepper and crayfish, stirred and brought it down. Behind, my Afang Soup was ready.
I quickly seasoned my already parboiled rice and beans with pepper, fish and crayfish, onions, seasoning cube and salt, confirmed taste, allowed to steam, added red oil, covered until the the water dried off completely and my son's MTN rice and beans was ready.
While rice and beans was on fire, I peeled and sliced my plantain, broke the egg into a bowl and seasoned with onions, pepper, ginger, salt and set aside.
As soon as the rice was ready, I fried the plantain and fried the eggs and tahdahhh! Plantain chips and fried egg was ready. Everyone ate their meal and was satisfied.
