At the end of today's busy day, I went to a unique tea shop hidden in the city. The shop is mainly known for two special dishes, Malaicha and Padha Roti. Although it looks like a normal tea shop, the taste had a different style of homely beauty and simplicity. The shop is located on the main road. Even in the hustle and bustle of the city, when you look at the shop, you can see a crowd of people. People come here from far and wide to have tea. One of the reasons for its popularity is the delicious tea it makes. The shop is very small. There is no atmosphere to sit. Even then, you can see people standing on the sidewalk next to the shop, drinking tea and chatting. The surroundings of the shop are clean, although not completely decorated like an urban cafe.

The real charm of the shop is its simplicity.

This tea shop has developed as a small tea shop among the big shops in the vicinity. Tea is made on a stove by the side of the road. Malaicha was being prepared in a large kettle on one side; Milk is boiling, malai is curdling, and the smell of cardamom wafts through it. In another corner, a large tawa is being used to fry roti that has been lying on it all the time. The shop is small, but it is very crowded. There are two people in this shop. One is very skilled in making tea, while the other sells roasted roti on the side. Both have their own skills.

Malaicha – Taste, Preparation and Quality

Malaicha is the most famous dish of this shop. it is not just tea, but a kind of home-made drink with a sophisticated taste. Malaicha is made with condensed milk, so the thick taste of milk can be felt at the first sip. The thickened malai on top gradually mixes with the tea to create a different creamy texture. The amount of sweetness is perfectly balanced, even those who do not like excessive sweetness will like it. In each sip, the taste of milk, the strength of tea, and the light aroma of cardamom all come together to give a unique experience.

The milk is boiled for a long time on low heat and then extracted with malai, so the chai is thick and rich. The mixture of cardamom and special tea leaves gives the chai an extra aroma. The color of the tea is also slightly paler than usual but attractive due to the density of the milk. Although the size of the shop is small, the quality of the malaicha was equal to or better than that of a large restaurant. The second hero of the Pada roti shop. The bread was folded many times, so the inside was soft and layered. The outside was slightly crispy, which created a nice contrast with the soft layer when you bite into it. The taste is enhanced even more by serving it hot. The amount of oil was just right—not too much, not too little. The soft inner layer and the slight ghee-like aroma are more enjoyable to eat when hot. The taste of dipping it in malaicha is incomparable; the creamy tea and the light crunchy bread go wonderfully together.

Service and Hospitality of the Shop

Although the shop was small, the service was sincere. The shopkeeper took the order with a smile. He asked if the tea sweets were okay, if the bread was hot, etc. Even in the midst of busyness, he maintained respect and attention to the customers. This kind of behavior is still seen in many small shops, which calms the mind in the hustle and bustle of urban life.

The experience of tea that day is still stuck in my tongue. The fatigue of the day was gone by eating hot Malaicha. The soft-crispy taste of the pada roti filled my mind. The simplicity of the shop, the friendly behavior of the people all together gave rise to a sincere, native feeling. I will undoubtedly remember this experience as a warm, sensitive memory.
