Let me share to you a Filipino traditional recipe called binignitor sweet stew. It is serve especially during Holy Week. It is a free meat stew of coconut milk and mix rootcrops.
Ingredients:
4 medium sweet potato cubed
2 medium purple yam cubed
8 pieces saba banana cubed
2 cup Muscovado sugar
3/4 kilo coconut milk
1 ½ to 2 cups water
2 medium gabi cubed
1 ¼ cup tapioca pearls
1/2 cup glutinous rice flour
1 cup of landang
- Mix the shredded coconut in a 1 liter of water. Strain the mixture through a cheesecloth and squeez firmly and extract all the liquid. Put in a large pot together with landang and glutinous rice. Bring to boil in a medium heat and stir occasionally.
- Clean and chop the bananas , sweet potatoes, and purple yam into cubes.
- Add it in a pot for 15 minutes and stir occasionally until it became tender. Add sago and stir to combine.
