"My Kitchen, My Recipe, My Story: week-3 (Pani Puri Recipe)

Pani Puri is a snack that makes your mouth water the moment you hear its name, instantly bringing to mind that delicious combination of tangy, spicy, and savory flavors. While it is often bought from street vendors, Pani Puri can also be easily prepared at home using just a few simple ingredients.
I prepared Pani Puri myself for a recipe contest. The combination of the savory filling, the tangy water, and the crispy phuchka (hollow shells) was absolutely delightful. In today's post, I am sharing the step-by-step process of how I made it from start to finish.
Required Ingredients
- Dried chickpeas (boot)
- Pack of phuchka shells
- 2 potatoes
- Coriander leaves
- Onion
- Tamarind
- Green chilies
- Lemon
- Coriander seeds
- Cumin seeds
- Dried red chilies
- Chaat masala
- Salt
- Oil (as needed)
- Water
- A few ice cubes

Method of Preparation
Step 1: Soaking the Chickpeas
First, I washed the chickpeas thoroughly and soaked them in a bowl of water for about 6 to 7 hours. Soaking them like this softens the chickpeas, making them easier to cook later.
Step 2: Boiling Chickpeas and Potatoes
After soaking, I transferred the chickpeas to a pressure cooker. Then, I peeled the two potatoes and added them to the cooker to boil along with the chickpeas.
Step 3: Chopping Vegetables
Next, I finely chopped the coriander leaves, onion, lemon, and green chilies and set them aside in a bowl. I would use these later for both the filling and the tangy water.
Step 4: Soaking the Tamarind
Then, I heated some water in a bowl and soaked the tamarind in it. Soaking the tamarind in hot water for a while softens it, making it much easier to remove the seeds.

While the tamarind softens and the chickpeas and potatoes boil, I will prepare the ingredients for the most exciting part of pani puri—the tangy, spiced water.
Step 5: Preparing the Spices for the Tangy Water
To prepare the spiced water, I first dry-roasted some coriander seeds, cumin seeds, and two dried red chilies in a pan. Once roasted, I transferred them to a blender jar and blended them thoroughly to create the spice blend for the pani puri water.

Next, I added fresh coriander leaves, two green chilies, and lemon juice to the blender jar and blended everything well. This mixture serves as a key ingredient for the tangy water.

Step 6: Frying the Puchkas
I placed a pan on the stove and added some oil. Once the oil was hot, I dropped the puchkas (hollow dough balls) into it. After they puffed up beautifully and fried to a golden crisp, I removed them using a slotted spoon, drained the excess oil, and set the fried puchkas aside in a bowl.

Step 7: Preparing the Tamarind Liquid
At this stage, I thoroughly stirred the tamarind that had been soaking in hot water and separated the seeds. Then, using a strainer, I extracted the smooth tamarind liquid. Meanwhile, as the chickpeas and potatoes were fully cooked, I removed them from the heat.

Step 8: Preparing the Pani Puri Filling
I placed the boiled chickpeas and potatoes in a bowl and mashed them well. Then, I added chopped coriander leaves, chopped green chilies, chopped onions, lemon juice, half of the prepared spice blend, some salt, and a bit of chaat masala, mixing everything thoroughly. This is how I prepared the filling for the pani puri.

Step 9: Preparing the Tangy Water
Now, it is time for the main attraction—preparing the tangy, spiced water for the pani puri. First, I combined the tamarind water mixture with the blend of coriander leaves, green chilies, and lemon juice. Then, I added finely chopped onions, chopped green chilies, some chaat masala, and a pinch of salt. Finally, I added a few round slices of lemon to the tangy water.

To make the tangy water even more enjoyable, I added a few ice cubes at the end. This gives the pani puri a refreshing chill, making it taste even better.
That is how I prepared the delicious tangy water for my pani puri.
Step 10: Time to Eat
With all the preparations complete, it was time to eat. I carefully cracked open a phuchka (crisp hollow shell) and filled it with the prepared filling. Then, I dipped it thoroughly into the tangy water and began enjoying the delicious pani puri I had made.

My Experience Making Pani Puri
I’m not saying this just because I made it myself, but the pani puri turned out so delicious that it is hard to put into words. We often find the pani puri sold outside incredibly tasty because of the use of MSG (tasting salt), and we tend to think that homemade versions won't match that shop-bought flavor. However, that notion is actually incorrect; we can enjoy shop-quality pani puri at home without using MSG. If you follow the method I used, the result is incredibly tasty. MSG is harmful to the body, and street-side pani puri often involves unhygienic ingredients, whereas the version I made at home contains nothing unhealthy. Although I used packaged phuchka shells, I made sure to choose a high-quality brand. I feel that the main attraction of pani puri is the tangy water; the overall flavor depends entirely on it. The better the tangy water tastes, the more enjoyable the pani puri becomes. The tangy water I prepared for the pani puri turned out so delicious that I really enjoyed eating it.
