Hello friends and welcome to my blog. Who wants to eat the rainbow? Me! Join me on my rainbow eating process and preps.

I was excited on the theme of this week which is eating the rainbow and for this week, I had prepared cooked potatoes with vegetables sauce with different colorful vegetables as you can see.

These are the ingredients I used for my vegetables sauce and potatoes.

Sweet Potatoes
Sweet corn
Green peas
Carrots
Spring onions
Tomatoes
Onions

Procedure

I washed the vegetables and sliced them into tiny pieces. The tomatoes, onions, springs onions, carrots.

I washed the green peas and maize and cooked them for a while.

I washed the potatoes and and also cooked them until they are well cooked.

I put fry pan on fire and added small dash of oil. I added some onions to the oil. I then added tomatoes and stored it while allowing it to cook a while.

I added stock cube, salt, grinded pepper and onions to the steaming tomatoes.

I then added the carrots, green peas and the sweet corn and stirred them together. I added a little water to let it cook a little so that the vegetables won’t loose their freshness.

I didn’t let it cook for long. Then I added the fresh spring onions and stirred it and the vegetables sauce was ready to serve.

The Story Behind It. Tell us the story behind , Why did you choose this recipe for the contest. Have tried to make healthy food for your kids.

I have always loved to eat fresh foods and vegetables. There is this special excitement I get when my food is colourful. When my food is colorful, the sight alone amuses me and I relish it with joy.

So when it was time to eat the rainbow, I thought of what better way to eat something colourful if not to make my favorite sauce with all manner of colourful vegetables and off I went and it turned out beautiful.

Couples with the fact that I love sweet potatoes and the fact that they are very filling. I don’t have kids yet so I make the colorful food for myself. I used it for dinner and I had a great time eating and relishing it. I ate the rainbow indeed.

Why Is Healthy Eating Important?

Healthy eating is important because it provides our body with the nutrients it needs to function properly. A healthy diet helps to us to:

  • Maintain our good health and overall well-being.
  • Boosts our immune system and help our body fight diseases and sicknesses.
  • Gives us energy for daily activities.
  • Support proper growth and development.
  • Improve our concentration, mood, and productivity and also helps us maintain our weight.
  • Reduce our risk of getting chronic illnesses such as diabetes, high blood pressure, and heart disease.

Why Should a Balanced Diet Be Consumed?

A balanced diet contains the right proportions of carbohydrates, proteins, fats, vitamins, minerals, fiber, and water that we need. We should consumed it because:

  1. It supplies all the essential nutrients our body needs.
  2. It helps our body grow, repair the tissues that are damaged and helps us stay strong.
  3. It makes our bones, muscles, and organs healthy.
  4. It gives us health in the lingered and reduces risks of heart diseases.
    Examples of Healthy Recipes I Make at Home

Some healthy meals I make at home include:

  1. Vegetable Omelette
  2. Pancakes with Fruit
  3. Jollof Rice with Chicken and Salad
  4. Vegetable Stir-Fry
  5. Beans and Plantain
  6. Fruit Salad etc.

Healthy eating simply means choosing nutritious foods and eating them in the right amounts to support a healthy lifestyle.
