I hope you are all doing well. Besties welcome to my new participation in The Kitchen Diaries Season 32, Week #6. First of all I would like to thank @suboohi ma'am for organizing this wonderful contest. It gives us a great opportunity to share not only our favorite recipes. But also the stories and lessons behind them.

This week's theme, "Opps To Yummy," is very interesting. Because every cook has made mistakes in the kitchen at some point. I am happy to share my experience with Homemade Mutton Biryani. A recipe that did not turn out well the first time. But later became one of my family's favorite dishes.

The Ingredients Required For This Recipe Are Listed Below !
Ingredients
Mutton Two Kg
Rice One Kg
Red Chilli Powder Two Spoon Or As Needed
Salt For Meat Two Spoon Or Rice As Needed
Turmeric Powder Half Spoon
Red Chilli Flakes Two Spoon Or As Needed
Zeera Powder One Spoon Or As Own Need
Garlic
Tomatoes One Large
Onion Four Medium

Step 1 !

First I washed the mutton thoroughly. Under clean running water to remove any impurities. After draining the excess water. I transfer it to a large cooking pot. Then I add sliced onions and whole garlic cloves. That simple ingredients is the foundation of a rich and flavorful biryani. It help to enhance the natural taste.

Step 2 !

After adding the onions and garlic. I mix in all the spices. Including red chili powder, turmeric, red chili flakes and salt. Then I stirred everything well. So the spices coated the mutton evenly.

Then I covered the pot. I let the mutton cook on medium heat. When it cooked. The onions became soft, the spices blended beautifully. The mutton slowly released its natural juices. I continued cooking until the meat become tender. The gravy turned rich and aromatic.

Step 3 !

After some time the mutton became soft. The water started drying up. I cooked it for a few more minutes. Until the masala become thick.

Finally I added a half cup of ghee. I mix everything well. This gave the mutton a fresh flavor and made the masala even more delicious. At this stage. My mutton is fully cooked.

Step 4 !

After the meat is cooked well. I added cumin (zeera) and mixed it nicely. Then I added chopped tomatoes. I cooked everything together for a few minutes. The tomatoes became soft. I mixed well with the masala. This making the gravy more flavorful. At this stage the biryani masala is almost ready for the next step.

Step 5 !

Then I started preparing the rice. I added cinnamon sticks and star anise to boiling water. So the rice would have a nice aroma. After the water came to a boil. I added the soaked basmati rice. I cooked it. Until it was about 80% done.

Step 6 !

Then I drained all the extra water. I left the rice for a minute so the steam could settle. The rice looked nice, long, and separate. At this stage both the rice and the meat were ready. The biryani was almost ready for the final dum.

Step 7 !

When the rice was ready. I spread the cooked meat evenly at the bottom of the pot. After that I gently added a layer of boiled rice on top without pressing it down.

Then I poured a little biryani color mixed with water over the rice. This gives the biryani a nice look after dum.

Step 8 !

After adding the last layer of rice. I spread it carefully over the cooked meat. Then I poured a little yellow food color. I mixed with milk on top. I sprinkled some freshly chopped green chilies. The simple additions give the biryani a nice color.

Then I covered the pot with a tight lid. I left it on low flame for about fifteen to twenty minutes. During this time the steam slowly cooked everything together. It allowing the rice to absorb the rich flavor of the meat and spices.

When the dum is complete. I gently mixed the biryani without breaking the rice. The grains stayed long and fluffy. While the meat become soft and flavorful. The wonderful aroma spread throughout the house. Everyone is excited to enjoy the homemade biryani. This making it a delicious and satisfying family meal.

Tell us the story behind , Why did you choose this recipe for the contest. Share how you failed in this recipe first time

I chose Mutton Biryani for this competition. It is one of my family's favorite dishes. The first time I tried to make mutton biryani. I was very excited. But unfortunately my biryani did not turn out well. The rice was too rotted. The spices is not balanced. The biryani did not have the aroma and taste. That I had hoped for. I felt very sad. Because all my hard work felt wasted.

But I didn't give up. I learned from my mistakes. I again made the Biryani with full attention. This time I boiled the rice only to 80%. I used the right amount of spices and steamed the biryani for the right amount of time. The result was that the rice was fluffy. The mutton was tender and juicy. The biryani tasted delicious. My family liked it a lot and appreciated me too.

That is why I chose mutton biryani for this competition. Because it taught me that even if the first attempt fails. Hard work, patience and passion for learning will eventually lead to success.

Share any 3 basic mistakes that we done during cooking that may effect cooking or destroying our recipe.

3 Common Cooking Mistakes

1. Overcook the rice

If the biryani rice is fully boiled. It gets disintegrated while steaming and both the beauty and taste of the biryani are affected. So rice should always be boiled to about 80%.

2. Using the wrong amount of spices

If the spices are added too much or too little. The taste of biryani gets spoiled. Always use spices in proper quantity. So that the taste is balanced.

3. Do not give tail correctly

If biryani is steamed for less time or on too high a flame. The flavors will not blend well. While steaming for too long can dry out or even burn the rice. So it is very important to simmer on low flame for a proper time.

Your mutton biryani looks really delicious and beautiful. ๐Ÿ˜ I really liked the fact that you didn't give up on your first failure but learned from your mistakes and made a great biryani.
