🕒 Prep & Cook Time

- Cook time: 45 minutes
- Servings: 4–6 people
🛒 Ingredients
For the Chicken Marinade: - 1 kg chicken (bone-in thighs or drumsticks preferred for juiciness)
- ½ cup plain yogurt (curd)
- 1 tbsp ginger-garlic paste
- 1 tsp Kashmiri red chili powder
- ½ tsp turmeric powder
- 1 tsp garam masala or biryani masala
- Juice of 1 lemon
- Salt to taste
For the Rice & Aromatics: - 500g aged basmati rice (rinsed and soaked for 30 minutes)
- 3 large red onions, thinly sliced (for crispy birista / fried onions)
- Whole spices: 2 bay leaves, 4 green cardamom pods, 4 cloves, 1 cinnamon stick, 1 star anise, and 1 tsp cumin/shahi jeera
- Fresh herbs: A generous handful of fresh mint and coriander leaves
- Saffron infusion: A pinch of saffron threads soaked in ¼ cup of warm milk
- Ghee or oil for cooking and layering
Step-by-Step Instructions - Marinate the Chicken: In a large bowl, combine the chicken pieces with yogurt, ginger-garlic paste, lemon juice, chili powder, turmeric, garam masala, and salt. Mix well and let it marinate for at least 30 minutes (or overnight in the fridge).
- Make the Crispy Onions: Heat oil in a heavy-bottomed pan and fry the sliced onions on medium-high heat until deep golden brown and crispy. Remove and set aside on paper towels.
- Parboil the Rice: Bring a large pot of water to a boil with salt and a few whole spices (cardamom, cloves, cinnamon). Add the soaked basmati rice and cook until it is about 70-80% cooked (still has a slight bite). Drain immediately.
- Cook the Chicken Base: In a large heavy-bottomed Dutch oven or pot, add a bit of oil and whole spices. Add the marinated chicken and cook for 5–7 minutes until it changes color and releases its moisture. Layer half of the crispy onions and fresh herbs directly over the chicken.
- Layer the Biryani: Spread the parboiled basmati rice evenly over the chicken layer. Drizzle the saffron milk, melted ghee, and remaining fried onions, mint, and coriander on top.
- Dum (Low Heat) Cooking: Seal the pot tightly with a tight-fitting lid (use a kitchen towel or dough seal around the edges to trap the steam if desired). Cook on medium-high for 10 minutes, then lower the heat to the absolute minimum and let it steam (dum) for 25–30 minutes.
- Rest and Serve: Turn off the heat and let the biryani rest undisturbed for 10–15 minutes. Gently fluff and scoop from the bottom to serve a mix of white, yellow, and masala-stained rice with the tender chicken. Garnish with fresh cucumber slices, mint, and serve alongside raita and curry.
Pro Tip: For the best flavor, use bone-in chicken thighs. The natural fat protects the meat from drying out and keeps the rice incredibly flavorful during the slow-cooking process!
