Chef Mood 01 — Tutorial Video on How to Make Mashed Plantain with Fish Sauce

Today I am making something unconventional. This meal can be eaten at any time of the day when you just want to try out something new. It’s easy enough to recreate and preparation doesn’t take 1 hour. It is similar to the Nigerian Mosa but it has slight differences like the Irish and the spices. I hope you enjoy making this as much as I did.
Ingredients |

- 2 ripe plantains
- 1 big Irish potato
- 1 and half cup of flour
- 1 egg
- All spice seasoning
- Dry pepper
- Pinch of salt
- Oil for frying
FOR THE SAUCE |

- scotch bonnet pepper
- 1 large onions
- Smoked mackerel fish
- A cube of seasoning
- A pinch of salt
- Oil for frying
- Curry
- Thyme
Steps on how to prepare. |

Peel and cut ripe plantains and Irish potatoes. Wash and put in a pot. Add enough water to cook till soft.
Use a fork to check if it’s soft. Drain from the water and add into a plate and allow to cook for at least 2 minutes. Mash until it’s both combined well, then crack in your egg.
- Add the flour gradually until the consistency thickens up a bit. Season with all spice , dry pepper and stir to combine.
Place a non-stick pan on fire, add a little oil and regulate the flame to be on a medium. Coat your scooping spoon with some of the oil so that the batter will not stick to the spoon.
Scoop and place in the hot pan, spread it out a bit into a flat shape and fry until both sides are brown. Continue the process until everything is fried.
How to Make the fish sauce |

De-bone your mackerel and cut into tiny sizes. Roughly blend your pepper and onions together and keep aside.
- Place a pan on fire, add a little oil and pour in the fish to fry first so that it has an almost dry texture. Pour in the pepper mixture and stir to combine.
- Season with salt, seasoning cubes, curry and thyme or any other spice of choice. Plate and enjoy with freshly squeezed juice or any drink of choice.

This meal was not a planned meal for me. It was a “trust the process” kind of situation and i ended up loving it so much that I decided to share the recipe. This meal is delicious and absolutely filling and I’d encourage you to try it out. You can also use any other protein of choice and you’ll still have an amazing result at the end.
