How are your friends? Alhamdulillah, today I have come to participate in the of this challenge is SLC-S28/W3-“Local Taste, Global Twist| Healthy Local Cuisine” contest. I would like to thank @ninapenda. for organizing today's contest. But let's start without further delay, friends.

• Tells us about the dish you choose to make healthier and shows preparation steps.

The recipe I will make today is very healthy, but it is a popular and favorite winter food in Bangladesh. Today I will make winter pitha, it has become a common habit that people in Bangladesh make in their homes every winter, and according to that recipe, I also get ready to make this pitha every year during winter. I will make milk pitha. Dudh Chitay Pitha is a traditional dish. It is very delicious to eat these dishes during the winter season in the village. Although many people in urban areas cannot prepare these dishes, in today's era, these dishes are available at very low prices in road , and people get the taste of these dishes from there. However, today I will prepare this dish with a slightly different religious flavor. Let's take a look at the whole recipe .

Required materials 👇🏾

●White pita bread
● date molasses
● cinnamon
●small cardamom
●bay leaf
● milk and
●grated coconut

The Process of recipe


🟫 Step 01

to make today's milk-chitay pitha, first I cut the date pulp into small pieces.
Then I put 15 to 20 pieces of pitha on a plate.

🟫 Step 02

🍨Then I put half a kilo of liquied milk and some garam masala on a plate.
🍨I grated a coconut thoroughly and put it in a bowl.
🍨Then I put a fry pan little bigger, and I put it on the stove to heat the milk well.
🍨My milk is well heated, and when it boils, I will pour it into a container.

🟫 Step 03

🍨After pouring the milk, I will add a sufficient amount of water to the same container to heat it.
🍨When the water gets a little hotter, I'll add the hot spices here.
🍨After a while, I will add the shredded coconut here, about three to four spoons.
🍨Here, I will add date molasses to taste.

🟫 Step 04

🍨Then wait for about five to ten minutes, by which time the jaggery and paste will boil well again and be well heated.
🍨Then here I will pour the chitai pithas one by one into the jaggery water.
🍨After pouring all the batter, I'll wait here for a while, then I'll pour my warm milk over the batter.
🍨Then I will cover everything with a lid and let the pithas sit completely overnight.

🍨Then in the morning, the pithas will be well prepared again, completely saturated with milk and completely soft.
🍨Then, I will take the pithas out into a bowl and prepare them for serving.

• What ingredients or cooking methods did you change?

The pitha I made today in milk can be made normally, but today I have added coconut flakes as a change in my cooking method. Many people make this pitha without coconut flakes, and it is also delicious to eat, but I have added some coconut as an extra, which will double the amount, and it will give a different taste that many people may not be used to. It will bring back the taste of the ancient historical food that I heard from some people in my grandmother's time who used to eat this coconut in their food and felt the great taste. I have used coconut flakes in today's recipe to express that testy , and it is really amazing to eat, and it is a very effective way to change the testy of pitha.

• How did the new version affect the flavor and feel of the meal?

This is an ancient traditional testy that many people do not use along with religion, and some of these ingredients have been separated from food for easy and quick cooking. Currently, we prefer to prepare food from various instant cooking recipes, so we have introduced the tradition of reducing the ingredients of the food to make cooking easier and less expensive. However, if we follow the recipes of previous or ancient times, we will see that by adding different types of ingredients, the food is made much more delicious and much more interesting, which is why today I tried to give my food a bit of a rustic and traditional taste by using coconut flakes, but of course other foods or other religions have done the same. My food has improved considerably and has taken on a different flavor, but of course, my milk pie has become a royal flavor due to the use of ingredients from the previous meal.

• Why do you think people should try this healthier version?

Currently, such recipes are very time-consuming, and people have gradually lost interest in making these foods at home, so we are more used to buying these foods from outside, but the taste of home-made food will never match the taste of food prepared outside. We have to choose foods made with few ingredients, so if we make these foods at home, we can use enough ingredients.Therefore, people consider home-cooked food to be much tastier than food prepared outside. Food is prepared in a healthy manner at someone's home, and since families are large enough here, home-cooked food is much tastier than food prepared outside, so people will accept it easily, and if such ingredients are used to enhance the taste of food, people are bound to accept it with pleasure.
