Honestly, I like participating in recipe competitions a lot. But I really liked this week's subject Healthy Local Cuisine Challenge!”. I liked this subject a lot. So I decided to make Chinese Vegetables here. This is a very healthy recipe for us. In this, I cooked with a few vegetables. Along with that, I used a small amount of mustard oil. As little as possible. I made the recipe with this. Vegetables are already very beneficial for our body. If they can be eaten beautifully like this, then it is even more beneficial for health. Here I did not use too much spices and oil. As such, it is very healthy and wholesome. However, I found the recipe very enjoyable to eat. I hope you will also like it a lot.

I have made Chinese vegetables here with different types of vegetables. I have tried to make it in a very healthy way. This healthy dish is basically cooked with less oil. And it has become very nutritious through different colorful vegetables. Here I have mainly used vitamin-rich vegetables. Along with that, it makes our digestion easier. And these are very beneficial for our body.
Details :
First, I chopped all the vegetables into pieces. I also chopped the onion, green chili, and tomato. Then I washed and cleaned everything thoroughly.
Then I put a pot on the stove. In it, I boiled the beans and carrots. Once they were boiled, I took them out of the pot and drained the water.
Then I put a pan on the stove. In it, I added a very small amount of mustard oil. In it, I added onions and green chilies. I stirred them and fried them for a while.
Then I added tomatoes and cabbage to it. Then I added a little water.
Then I added cardamom powder, magic spices and salt. I will add these and cook for a while.
Then I added the carrots and beans. Then I let it sit for a while. Then I mixed the cornflower with water in a bowl and then added it to it. I cooked it like this for a while.
Then, when it got a little dry, I added chopped coriander leaves. Stirred them a little and when it thickened, I removed it from the stove.

Here I used potatoes among the traditional Chinese vegetables which I did not use. Again, especially the amount of oil used is much less than usual. Here I did not use too much. Only used light soy sauce. Moreover, I used beans, carrots, tomatoes and cabbage as vegetables, so that the nutrition of the food increases further. Here I used a non-stick pan to reduce oil. Here I used fresh vegetables which had a very amazing flavor. And here I kept the vegetables completely soft and slightly crunchy. Which is much healthier and also very good. I try to make such beautiful recipes from time to time.

I think the new healthy version has brought a lot of positive changes in the taste of the food. Especially since it is cooked without oil, the food is lighter and fresher. Along with that, it has added a natural taste. Which I like a lot. Again, since there is no excess here, the taste of each vegetable has been properly understood. Again, I have fried these vegetables quickly and kept them lightly crunchy, which has added a very fresh and beautiful texture to the food. Especially the vegetables I have given here have a different beautiful taste. So I think the new reform of my recipe has made the food more natural.

I think everyone should definitely try this healthy version. Because I think it is very easy and at the same time rich in nutrients. Especially I think it helps to maintain a very nice balance in the daily diet. Moreover, here I have used vegetables that are cooked in a pot and rich in vitamins and minerals such as beans, carrots, tomatoes, and cabbage. Especially this dish is very light and low in fat. Due to which it is more beneficial for the body.
