Apparently Rose can be eaten under some conditions

A delightful side note I came across is the fact that rose petals can be eaten. Until now, I've thought of roses primarily as decorative items, whether fresh or dried on a table setting, so the fact they can be eaten was a little surprising to me.

When it comes to using rose petals in cooking, you only want the petals, not the white, bitter part of the petal, the part attached to the stem. The culinary rose varieties have the largest amount of fragrance and sweetness, while still having some fruity notes. Darker colored petals like red and purple, tend to have a stronger taste.

One important thing to note is that you should not buy roses from a florist, they usually have been sprayed with a lot of pesticides and other substances you would not want to eat. Look for organic roses or perhaps those grown for food whenever possible. I've seen rose petals used in many different ways, as an ingredient in herbal teas, paired with jams, incorporated into salads and even served as part of dessert. Think about how nice it would be to garnish a salad with fresh rose petals during the dog days of summer or sipping on a hot cup of rose infused tea as winter nights approach. Now I'm even dreaming of this actually

Last weekend, I took some rose petals from my neighbour's garden to try making food with it, only experiment and it was cool in the end because I had no clue what I was doing. Of course I'm not an expert so I didn't bother eating it. It turned out pretty well, though maybe just a touch sweet. But it was fun to experiment. If you're interested in experimenting with natural or unique flavours, I recommend trying rose shaped candies or making your own special jam. But don't eat it until you know very well you've done everything to make it safe to eat.
